Supaksorn “Ice”Jongsiri, also known as Chef Ice, hails from Nakhon Si Thammarat in southern Thailand. He has a deep-rooted appreciation for the rich culinary culture of the south and draws inspiration from his beloved paternal grandmother, who was always the one cooking for the whole family. Spending his childhood during school breaks assisting his grandmother in the kitchen, Ice naturally developed a love for southern flavors and techniques.
Before founding Sorn, Ice embarked on a two-year long journey to all 14 provinces of southern Thailand, immersing himself fully by learning cooking techniques from farmers, fishermen, foragers and long-standing local eateries. He learned ancient techniques, such as using a charcoal stove to prepare rice and grinding rice grains into powder with stone mortars. Ice’s exploration deepened his appreciation for the flavors of local ingredients, and he vowed to honor the authentic cooking techniques and local flavors at Sorn.
